They also use it to find the formulas of complex organic compounds. The entire oil industry depends on it as well.

As for methods, most commons these days are instrumental analysis. This uses machines such as IR spectrophotometers, gas chromatograph, mass specs, flame ionizers. This just a small list. Also you have classical methods. Some of these include titrations, volumetric analysis, flame tests, and the list goes on.
