e.g. how does electricity know which plug to go to when you use it and why if you leave a socket switched on does it not come out

Current is available in all sockets since all of them are connected in parallel. Also current is not water to fall off from sockets. Unless a plug is plugged in and device switched on, no current flows. That is, a load is required for the current to flow. That is , again like you have food but unless you eat the food will not be exhausted.

Here the sockets are the plates from which food is available. Plug is like hand which takes the food to your mouth. if you open the food goes inside . Otherwise , it remains where it is.

plugs...outlets are all always hot. It's the way they are wired.

Because the plug is wired that way to have elec there all the time. It can't go anywhere unless it is connected to something.
