Ok this might take a while to explain.

EV stands for Effort value. pokemon receice them by battling and getting experiance. Every pokemon has a hidden EV value of what they give you. (Serebii tells you). Now a pokemon can hold up to 510 EV points. A pokemon can put 255 of these points into one stat. When you catch a pokemon they start with base 0 EV. For example battling a Starly gives you 1 speed EV point. These EV points influence the gain when leveling up. example. a pokemon thats slow (like slowbro) will normally receive 1's in speed when they level up.
But when they're EV trained for speed it could gets 2's and 3's for the rest of its life. As a bonus once that pokemon reches level 100 they get a bonus for their EVs. they get one point in that stat for every 4 EV points in that stat. so 255 in one stat divided by 4 gives you a +63 in that stat at lv 100!!!!

A pokemon I EV trained was my Dusknoir ( he has awful health) I fought 255 bidoofs to give him max hp. Now fighting 255 of an enemy sounds hard but you can speed up the process. giving a pokemon a vitamin (like hp up) will give that stat a free 10 EV's. but they can only receive up to 100 EV in one stat from vitamins. another way to speed it up is to let the pokemon hold macho brace or fight with pokerus. both of these double the amount of EV's received in battle.
So because I gave him 10 hp ups he had 100 hp EV. I only needed 155 more. So i gave him pokerus and let him hold macho brace. this gave him a X4 multiplier. that means he only had to fight 39 bidoofs instead of 255.
because I took the time to do this my Dusknoir will have around 290 hp at level 100 instead of having somewhere around 190 hp. you gotta be careful what you do with those EVs. If you ever mess up you can use berries to lower that stat. ( the ones that raise happiness but lowe a stat)
just keep using them until "it will go no lower"

now you know what EV training really is

There are plenty, decide on a mythical like giratina within the turnback cave.A dragon kind like gible which finally evolves into garchomp, you'll get it in Wayward cave I believe, within the basement.Choose a pokemon with well stats and that may be trained many movements.Try a bronzong for well safety and garchomp for well assault.
