I have a huge problem with it, as it is choking out my rosebushes!! They are (or were, rather!) beautiful and mature bushes and this vine is killing them!! I am afraid to use Roundup because it might kill the bushes! Also under the bushes is a bed of ivy...any suggestions besides Roundup and burning the whole mess down and starting over?

Oh boy. If your bindweed is rampant, you have some job on your hands. If you use weedkillers several (or many) applications will be needed. You can wrap bushes in dustbin bags/plastic sheets etc, before spraying, but many weary old gardeners know that digging it out is the best method. Every single last piece must be removed, as bindweed has extensive underground roots.

Pull the bindweed off the rose bushes and cut it to within a few inches of the ground so several leaves remain on each stem. Then you will need to apply Roundup or Crossbow. Do not spray unless you can keep it from drifting onto your rose bushes. A better way would be to apply the plant killer with a small paint brush on the remaining leaves. Too time consuming? Perhaps, but then your roses won't die with this application method. By the way, the ivy will also strangle your rose bushes, so you may as well give it the same treatment as you do the bindweed.

Use UNdiluted Roundup. Paint it on the offending leaves with a bristle brush or foam brush. Great control of the product, no harm to desirable plants.
