We are trying to map out a process by which one or more business analysts would interview key members of an organization with the intent of mapping out their various approval processes. We're looking for a rough ballpark of the amount of time/FTE required to conduct the interview portion of this process discovery analysis.

I've done lots of these. I assume from the question that all you're trying to do is to create a process flowchart or map for each approval process. It really depends upon is you can get all the people together at the same time who sign off on the approvals. If so, you can go a group interview and finish it in about 1-2 hours. If you have to do them one at a time, figure about 45 minutes per person ... you'll spend 30 minutes with them the first time, and you'll have to follow up depending upon answers you get from others.
