Using Visio (Part of Microsoft Office 2003) virtually no time at all.

Depends on how much detail you want, the size of the organization, and if you are using software designed to do org charts. It also depends upon if you have all the information at your fingertips.

I've done simple ones in a few minutes and complex ones that took 2-3 days.

Depends on the size of the ogranization. I can create one in a few min. For large organizations, with many departments and such, it takes longer to lay out and put on paper.
