Can I pay a auto mechanic to go with me to buy a car that was left on the side of the road from an auto auction or a junkyard, to tell me if it's worth fixing?

There are two issues here.

One is "can you hire a mechanic to check a car at a location other than the shop?". The answer to that is yes. Some shops may be willing to send someone out to look at a car. Some mechanics may be willing to do "side work", meaning that they will go with you after work, and you pay them directly.

The other issue is the ownership of the vehicle. No mechanic in his right mind is going to work on a car without the permission of the owner. You say the car was left on the side of the road. Do you know who owns the vehicle? Even if a car is left abandoned, you still would need the permission of the owner to touch it, unless you have governmental authority to tow it to an impound lot!

Otherwise both you and the mechanic you hire could end up as residents of the Graybar Hotel (jail)

Some will. Better question is finding a title for an abandoned car to buy in the first place

Usually. Check around local dealerships to find a mechanic who'll go with you for a small fee,,probably after work. ;-)=

Sure, as long as you pay "shop rates".
