one of the most well known in this group of birds like blues but this one tasted is off white, light green and yellow.

It's a bird. I would guess maybe a Pied Currawong? They have yellow eyes with predominantly black with white plumage and found in eastern australia. They are typically frugivores (fruit eating), granivores (seeds, grains) and insectivores (insects), so that takes care of that clue! Birds have a very intricate "mating ritual" to ensure reproductive success, with males usually enticing females through nest building, complex songs or plumage etc (this is a display of "good genes" as mate selection is by the females, so the boys have to impress!). I must admit I'm not sure of the mating behaviour of the currawong, but its a guess!
The yellow-tailed black cockatoo fits into most of the clues, but I don't believe the male builds a nest for the female (according to my reading both sexes assist in nest building...)
My last option would be the regeant honeyeater, which also fit into most of the clues, but again I'm not sure of the mating behaviour. I do know that there are active groups (the biological society at monash uni being one of them) working with the recovery project to help restore numbers.
I'll be interested to see what the real answer is (fingers crossed I'm on the right trail of thought!!)
