Where are you staying? There are a lot of good ones. I have a place there and have lived there on and off for years.
There are those "tourist" spots that are not the best by far. Most of the Hotels have a buffet but I think the really good ones are costly now so as to discourage ordinary folks from eating there.
The Rio Hotel always had one of the best but when Harrahs bought the hotel the quality that the Rio was famous for went bye bye even though it is still a large and popular buffet.
Assuming you are staying on or near the strip, the best ones I feel are the Bellagio or The Seafood Buffet at the Rio. Both are pricey but you get what you pay for in Vegas now.
If you are off the strip, then try the Cannery Hotel on Craig Road in North Las Vegas. Great buffet for the price.
I also like the Asian Buffet on Sahara at rainbow (I think). there is another one in Henderson on Eastern. I also love the Blue Moon Buffet in Henderson. Very good and very popular.
I love the buffets and hopefully you will as well.

Mandalay Bay - Bay Side Buffet
With sweeping views of the hotel's tropical lagoon, this cleverly partitioned room is done up in a light, breezy style. Among the food selections are peel-and-eat shrimp, salads and two types of crab legs anchoring the cold bar, with thick-crust pizzas and a large Mexican station adjacent. A Chinese station offers up authenntic pot stickers, egg rolls and barbecue spare ribs. Carnivores are in heaven here with a carving station featuring six meats in addition to prepared facorites such as roast duck, osso bucco, veal scaloppini and lamb chops with apple chutney.
Desert aficionados, however, will argue that it's the home-made cookies, coconut macaroons, bread pudding, cheesecake, pies and chocolate mousse that define this spread.
Dinner: $17.95
Rio Suites Hotel - I have had to take the Carnival World Buffet off the Best Buffet list. The quality has dropped too far and the prices have risen too much. If you are a huge seafood fanatic and are going to be at the Rio anyway, it's still probably a good bet that you'll enjoy the seafood buffet. It's pricey at $26.95 for dinner (4-11pm), but if you are craving seafood, this is the place to go. The one thing everyone says is to be sure to leave room for dessert. Apparently their dessert selection is fabulous! we will be going back to both of these on our next trip. ps leave some money for us. have a great trip!!!!

I don't know that I would say it was the best, but I really enjoy the buffet at PARIS. Aside from the regular munchies that every buffet has (shrimp, crab legs, fried chicken, pizza, etc.) there are 4 other stations. Each serves a variety if dishes from a different region of France.
I HIGHLY suggest giving it a try, and wear your "eatin' pants." The ones with the elastic waist.

I loved the SPice Market buffet at Alladin. Wynn buffet is very good esp with the seafood. Bellagio is good but tends to get really busy. Rio has a seafood buffet if you're into seafood. MGM Grand's buffet has good cookies and prime rib if that's wht you're into. I love Vegas buffets and always seek them out when I"m there.

Do something different and have an INCREDIBLE Sunday Brunch Buffet like no where else IN THE WORLD!
On Sundays, you MUST TRY THIS. If you can get in (it is pricey - $53.00 and exquisite) is the Sterling Buffet at Bally's. Maine Lobster, Sushi, caviar Raw and cooked shellfish. Rack of lamb, venison fillets and Unlimited pours of Perrier Jouët. This is an experience in fine dining.
It is SO exquisite it is absolutely well worth the money for the experience.

As for the other places:
Rio used to be great, but I think it has gone down hill, especially their Seafood buffet.
I think Belaggio is by far the best for Lunch and Dinner.

I think for WEEKDAY BREAKFAST, the best one is at the WYNNE HOTEL. It is around $15, but worth every penny and includes more upscale, gourmet offerings than most of the other casino buffet restaurants. Even the seating and atmosphere are much better--with an atrium style central seating area and lots of natural lighting. The applewood smoked bacon is HANDCARVED in the style you see most chefs carve prime rib. Orange juice is fresh squeezed. The offerings even include lots of smoked salmon, lox and Asian cuisine. Desserts are served individually as well.
Best of all, the price and atmosphere eliminates a lot of screaming kids and the riff raff you see at most of the more mainstream casino buffet restaurants--and that reason alone makes going here worthwhile!

I was there for a few days just a couple of weeks ago and the BEST I went to was:
Flavors at Harrah's
You can get discount coupons at the "Rewards" desk when you become a member. Either way, it is well worth the price!
The food is fresh, hot and DELICIOUS. They have anything that you want. Even a chocolate fountain!

Gespacho is DEAD-ON right!
He suggested the Sterling Buffet at Bally's in another answer and I decided to take my girlfriend and her folks for Sunday Brunch.
WOW! It was like eating at a State dinner. Incredible. The highest qulaity of everything and it all could have been photographed for food and wine. An incredible dinign experience that makes all others look like you are being served table scraps.
