Rechelle Ferrell is one I like. There's also a jazz vocal group I heard once (not sure if they are still making albums though) that really impressed me. They were called New York Voices.

My favorite is definitely Diana Krall, especially if you're looking for authenticity and talent (she's a jazz pianist in addition to singing).
