Depends a little on your budget.

The Fashion Show Mall mentioned by the last poster is a nice big mall that you can easily spend a few hours touring.

There is the roller coaster in NYNY, M&M World and the Coke store are fun. A trip up the Stratosphere and the three rides on top are a good option. Circus Circus has Adventure Dome which is an indoor theme park with a roller coaster and other rides.

You can check out the Shark Reef at Mandalay Bay ($) or watch the white tigers at Mirage (free) or the Lions at MGM (also free).

There are two exhibits at the Tropicana. One called Bodies and the other Titanic both are for all ages. You can get cheaper tickets for those at one of the 1/2 price ticket booths.

In the evening, there are quite a few fun shows. All the Cirque Shows (except Zumanity) are fun for anyone over 12.

I would avoid downtown since Fremont is mostly gambling and the Fremont experience is hardly worth the effort.

There are movie theatres at the Coke Bottle and the Orleans (off-strip) and Bowling at the Orleans and the Rio(also off-strip but there is a shuttle via Bally's).

There is always people watching. At Paris, walk over to the cobble stones walkway, buy a crepe at the creperie. It's a great place to watch people.

Hopefully, your are staying at a hotel with a pool so you can spend sometime there.

Have Fun and try to stay out of trouble (which is very hard in Vegas) :-)
