As almost everyone has said, it'd take you to the first search result, which Google think is the best match to your query. It is named "I'm Feeling Lucky" because if you are lucky, the first result would be relevant to what you're looking for (which usually do) but if you're less than lucky the button would bring you to a site that is no where what you're looking for.
For example, if you're using I'm feeling lucky to query "Java" (wanting to visit the island), you'll instead get Java games site, which means you're not lucky this time. But if you queried "Java" (wanting to learn programming) you'll get Java games, which is somewhat relevant, since Java is a programming language that is often used to create games.

The "I'm Feeling Lucky" button automatically takes you to the first web page returned for your query.
An "I'm Feeling Lucky" search means less time searching for web pages and more time looking at them.

It just means that, if you choose not to use the FABULOUS Google search engine, then you can choose to click this button and take your chances with what you get. The result is usually either a joke or something related to what you were searching for.
*In the good old days, when you typed in "Weapons of Mass Destruction" and clicked the "I'm Feeling Lucky" button, you would get this result http://www.subways.net/iraq/404.html (read carefully).
