Nobody is really doing comprehensive studies on the nutritional value of the human brain. But there are OTHER brains that are eaten for which information is more readily avilable (link 1).

Assuming that for our purposes that one brain is much like another, 1 oz of brains has around 41 calories which comes from 2.9 g of fats and 3.6 g of proteins. Brains have practically no carbs, so if you're on the Atkins Diet it would seem to be an approved food. The real concern is cholesterol - brains are LOADED with the stuff. 1 oz of brains has almost 200% of the U.S. RDA! So zombies with heart trouble definitely want to stick to other kinds of organ meats.

There's alot of fatty tissues in there.
