I need to re-attach three hinges on a door off the back deck of a home I bought. It is a pretty solid door with a "Z bracing." Which screws would provide the most strength for attaching the metal hinge to the wood?

Galvanized wood screws will work.

Anderson head screws (square drive) have a tendency to strip if decking is not pilot drilled deep enough & properly countersunk in hard wood. Some driving bits just fit better also & toss the bit if it has been "spun " a couple of times. Some screws are not the best either. If there is enough head showing ,have been able to back them out w/ Visegrips. The Sears screw remover bits are good for backing out also. Best regards

You can use wood screws but get a rough threaded screw and one made of a material that will resist rust.

Pretty much anything on hand but, if the rain can hit it, go with galvanize.
