Freezing or cooking is pretty much your only option. I've never heard of canning broccoli, and if you tried, it would probably turn to mush and turn brown. Raw broccoli rots in a week (trust me - just tossed out a bunch of it.)

Start cooking! There are tons of meal ideas at food network. You can kill 2 birds with one stone and freeze some of the meals, when rushed take out and thaw before you go to work, heat and dinner is done.

You could can it. Using Ball jars and lids. You would need to check on the timing for heating the jars for the best seal I do not have that info. I have canned almost every type of veggie and it is always better than store bought.

Freezing is pretty much it. It will keep in the fridge for about a week but if you need to keep it longer then the freezer is it. Canning is also an option.

Sharing with a less fortunate neighbor. You could also cut the florets and keep in a zipper bag for snacking.
