Well you were probably expecting people to go "Oooh, that's a good question, I don't know...", but I guess your bubble got burst with all these smart-alecs saying "it's not in contact with dry air" or "they're made of a special plastic blah blah blah...". These people don't actually know they just copied the first person who answered that to make YOU look bad. Well I have no clue why glue doesn't stick to the bottle, but I do think the most plausible solution to your query is googleisit's answer.

Because it is airtight and the glue does not set until it comes into contact with air. Me and my bros got it all over the sofa a few weeks back and it started to melt the material. On top of that it nearly stuck my fingers together and my jeans to my leg. Clumsy or what??!!

I don't know Jim why does it not stick to the inside of the bottle? I'd love to hear your version!! HA!HA!HA! Maybe it has something to do with the residue left on the inside of the bottle?

The glue fairies can't get into a closed bottle to harden it up.

Because with the cap on, there is no means for the moisture in the glue to evaporate.

Hardens with air. If you leave the cap off, you'll notice that the top is hard glue.

Maybe because there is a lack of air to dry it out on the inside.

There isn't enough air in the bottle to dry it out. It needs the air exposure.
