You could try Dragon Rider by Cornelia Funke.
Paolini's stuff is already listed here, I see.
This one features a girl as the main character but you could try Dealing with Dragons by Patricia C. Wrede (very entertaining).
Dragon's Milk was one I read a while ago. It was okay... kinda' sad though.
I'm sure there's another one called Dragon's Blood (but I haven't read it).

Also, this website boasts that it has 5 top dragon fantasies. They look kind of interesting, so why don't you take a look?

I can't believe no one has said the Dragonriders of Pern by Anne McCaffrey. These are wonderful, classic fantasy books. While contemporary books are good too, these have stood the test of time (first was published in 1968) and still remain the best dragon books I've ever read!

katherine kerr is good, but u need to start the deverry series first and not much dragons in there.. so takes 4 boooks before u get into the dragons but lots of magic an shapechanging. dragonlance from margeret weis an tracy hickman still best series to be found
