Mine is the one at the end of The Phantom Menace with Obi Wan, Qui Gon and Darth Maul.

My most favorite has to be Vader vs. Obi Wan in A New Hope because it's such a classic and via Obi Wan's death, it sets Luke Skywalker on a completely new path of independence and uncertainty. It's the most vital scene for the onset of Luke's journey next to Uncle Owen's and Aunt Beru's death.
My second favorite is Anakin vs. Obi Wan in Revenge of the Sith because both of these life long friends feel so utterly betrayed, and also because Anakin is so completely vulnerable and destroyed--physically and spiritually.
My third favorite is the Phantom Menace Darth Maul vs. Obi Wan and Qui Gon because of the dual light saber, Maul's agility, and the choreography--that scene is certainly the most exciting of all the duals. Also, you could tell that Lucas really worked hard to step the duals up a notch, and it was executed flawlessly. I was so impressed by Darth Maul.
It's really hard to choose because there are so many exciting light saber duals.

For me it HAS to be when Vader has a right pop at Luke,..
