The best band ever... Apocalyptica. I have only ever heard one song with vocals, The Path Volume 2 feat. Sandra Nossac (sp?)

Joe Satriani is all instrumentals. After that, you have to be selective.

as far as 'metal' hmmm you can try some john petrucci but thats if you want to call it metal. you can also try some yngwie malmsteen songs
