The turtle will probably eat live food too. If you try crickets, or rosies, there is a good chance he will be interested. If it's veggies, I think a good way to get them to enjoy those is to start with water plants like Anacharis. Most pet stores sell this, and most turtles enjoy it. If your turtles is under 4 inches, it may be a little while before he is interested in plants. little ones are more carnivorous, the older RES eat more plant matter. If you are giving an over 4 inch slider pellets every day, switch to every other day with the pellets, and everyday with the veggies. they will eventually eat them, it just takes a bit of time.

Our sliders love shrimp. When we eat shrimp, we eat them down to the tail, but do not pull out that little bit of shrimp that is in the tail. The turtles eat the shrimp, tails and all. They also love worms. My wife collects them when she is gardening and the turtles have a feast. Or you can buy nightcrawlers at a bait store.

Turtles love a variety of foods. You can offer small feeder fish, dried blood worms, crickets, earthworms and live aquarium plants (even romaine or a dark leafy lettuce). They are very greedy eaters so I don't quite understand why he wouldn't be eager to eat any of these things. Try getting some feeder fish, it'll peak his interest and get him moving around.
