example: Chase Utley has 62* career home runs before the all-star game and hits one home run in said game. Would his career stats say 62 or 63 career home runs after the game?

*Actual career stats for Chase Utley unknown to me, this was strictly an example.

No they do not... niether do post season games for that matter. In your example, Chase would still have 62 HR's when play resumed following the All Star game.

Need to be a little quicker on the draw, Wyatt. All-Star stats count only for All-Star games. Like World Series stats only count for World Series games, etc. Only regular season stats count for the regular season games.

No, they don't count.

A good example of this:

A few years ago Eric Gagne was in the middle of his record saves streak. He was called into the All-Star game and gave up the go-ahead home run. This is a blown save, but since the game was the All-Star game, it didn't count.

The All-Star game is like Spring Training games, exhibitions.

Production and results from the all-star game do not count towards a player's career regular season statistic totals. Nor do results from spring training or any post season games.

All-Star stats do not count towards career totals as it is still considered an 'exhibition game'.

No. All-Star statistics are complied separately from championship seasons.

No, they don't. The game is an exhibition and not official, so neither are its stats. . . .
