There are good places all over Amsterdam. There are lots of small places with tables by the canals. There are many cafesmin either Leidseplein or Rembrandtplein. I go to De Nachtwacht at Rembrandtplein on most visits to Amsterdam - the lobster soup and ribs are great.

One cafe that's particularly nice is De Jaren Cafe near the theater at the University of Amsterdam. It's included in the listings at: http://www.amsterdam.info/cafes/ ... another is Cafe Diner de Munck. I ate there the weekend before last and look forward to going back.

Het Karbeel on Warmoestraat 58 is pretty good too (but more a restaurant than cafe) if you're interested in fondue. Try the mustard cheese fondue..

Hill Street Blues,Stones in Warmeostraat, central Amsterdam.Plenty of small places there.Nes which is behind Tara's Irish bar down Rokin(name of the street),infact Tara's is ok,big though and can't smoke dope.Depends if you like sleezy dives to where u go or not.Riks,Hard Rock bar and Suzie's saloon, not far from Warmeostraat(all 3 in a row).Susies has a website.Last Waterhole off Warmeostraat(they also have free bands nearly every night).Don't know name of roads but all in walking distance of each other.Lots of bars/coffee shops around there, just a case of mooching about.Plenty of cozy little bars further into the red light district but be real careful at night.I lived there years so know how dangerous the place can be and what goes on.If I were you stay around that area, that's where it's happening!

All over town.
And what is more, the places that are 'hot' now will have changed owner before you come.
Best ask your hotel owner or hostel staff to point you to the best place for your kind of fun.

I like the brown cafes (bruine kroegen) you will find all over the Netherlands. But others rather go to a place with the newest music or the best things to smoke.
