banana peelings can be used for charcoal, so what's the reaction between the two?

All living things including bananas are made from Carbon.

All charcoal is made by removing water and volatile organics from organic material. Charcoal has carbon in it, but it is not pure carbon in most cases. In some cases it can have calcium minerals in it and the commercial product you buy has additives. Banana charcoal is made in the same general way. The references will give you more detailed info.
