I think it's partially to help you visualise the scene and the day. Thinking of a bright sunny day brings many images and associations to mind that are different from a cloudy day. The author can drop you into the scene very quickly that way.
Also, it tells you a bit about the character eg they are not wrapped up so much in their thoughts that they see nothing, they are observant and perhaps can pick up information visually, they like to experience their days to the full or they're judging whether they can make it to their destination without being rained on etc etc etc

Writing something like that is a way of making the reader visualize the story. If the author just had the characters rush through the main plot without discribing everything that happens along the way, it wouldn't be a very interesting book would it?

Some have very interesting ways of describing the sky. Like DBC Pierre's lava lamp sky in Vernon God Little. I guess it would depend on what kind of prose you were writing. I doubt you would see a sky description in a James Patterson book - but someone like DBC Pierre who is known for his beautiful prose does a very good job at it. Honestly, I cannot remember ever describing a sky unless it had some meaning to the story. Maybe once or twice. Why? Don't you like skies?? Pax- C

I don't really care for it when authors have their characters describe scenery whether it be the sky or the ocean. It really gets on my nerves. But I guess they do this so that we can feel like the character does at a particular moment.

Don't you find that you enjoy most the books that allow you to lose yourself in the world they create? Good writers know that the best way to do this is to tell you everything about that world - how it looks, smells, feels, and what the sky is like.
