Gosh...you probably can't tell your boss this but as a customer who goes to restaurants frequently, I really hate that. I'm either talking to the hostess's back as we all maneuver through the restaurant or she's trying to walk sideways and talk to us at the same time. After the polite greeting at the door, I'd much prefer being guided straight to the table without fake conversation enroute.

Well, the same kind of ice breaker you would use with any recently introduced person.
1. A comment on the weather..."It's hot/cold out tonight, isn't it?" Or humid or whatever it might be. That's pretty safe for those who look like they don't want to talk much.
2. A comment on a particularly nice ensemble someone is wearing. "What a beautiful dress! Where did you get it?"
3. "Have you dined with us before?"
4. "Do you live locally or are you vacationing with us?"
5. "Are you celebrating a special occasion tonight?"

Ask them if they have ever eaten at this restaurant before. If they say no then tell them what is unique about it (like large family size portions or the chef's new creations for the week). If they say yes then tell them that the restaurant has some seasonal specials they probably have never tried (like the summer fruit salsa that comes with some of the entrees). ALso be sure to smile and tell them you hop ethat they enjoy their meal, when you get to the table.

Ask if any in the party is a vegetarian. If the answer is no, you say good because tonight we have........ sell the food/drinks.
If the answer is yes, you say, good you have just to try.....
again the point is to sell the food. That is what the Boss wants. Be yourself, always!

"Is this your first time here?"
"Are you on vacation?" If so: "What else are you planning on seeing today?"
"What's the weather like?"
"Are you celebrating a birthday or anniversary today?"
"What brings you here today?"
