I was wondering what happens if you were to take the seeds from a pickle and plant them.. Would you grow cucumbers, pickles or nothing at all?

Cucumbers are pickles that have been boiled and the seeds have been sitting around in vinegar stuff, so nothing at all.

Nothing. The pickling process destroys the seeds. The combination of high acidity from the vinegar and high salinity from the brine destroys the structure of the cells within those seeds.

The pickling process kills the cells, including those found comprising the seeds. So planting seeds won't bring incipient life back. There will be no growth.
