Replace the T-stat. Some are quite inexpensive, a cool only can be found for under $10. If you have heat and cool, pick up a programmable T-stat, and it will pay for itself in one season.
If your problem persists after replacing the stat, call in a pro.

sounds like the anticipator is not functioning correctly. It is a range setting that keeps the unit from kicking on and off on a cool day. Take the front off the thermostat. If there is an adjustment visible, move it one way and watch for the results.

A new thermostat will fix but all you have to do is set the one you've got to a temp you find comfortable and not worry about what temp is claims to be.

it would be nice to know what type of thermo you have.
it seems to be out of calibration. this is not something that i would recommend to the regular do-it-yourselfer to try and do.
you can blow a transformer, or a solenoid switch or render the entire system inoperable. i wish i was there to help you but the best suggestion would be to have a pro look at it. good luck.
