I signed up and my site is all about animals..pets. How do I set it so I only post ads that are related to pets ect...? I can't find it anywhere on my account.

it happens automatically!
Especially if the names of the actual pages are about pets, the ads after a little bit will be about pets.
But the pages have to be online, it won't load anything if you try opening from your desktop. I mean, sometimes it does but usually it doesn't.
I would suggest you get into the settings and block ebay from displaying ads on your site, they pay nothing and more often than not they are irrelevant ads.

This is what Google says:
"AdSense for content automatically crawls the content of your pages and delivers ads (you can choose both text or image ads) that are relevant to your audience and your site content."
So your site's content is what the ads are based on, you do not have to do anything, it will happen automatically. Sometimes when you first launch a site you will get irrelevant ads but they will soon change to match your content.
