I'm sure they know they are attacking something other than their normal prey, whether out of fear, hunger, territory, etc. However, they cannot put the same meaning on 'human' as we do. To them we are just another animal.

A bear is a solitary, opportunistic, omnivour.
Anything that moves is either food, or competition for resources.
They do learn from their parents what to eat and what to avoid.
Mostly, they've learned to avoid humans because we're dangerous, and attacks come when the animal is surprised or startled.
Mother bears with cubs are very protective and may attack on sight if they believe their young are threatened.

Yes they do-they do it out of fear for their young or infringement on their territory.They normally don't eat people
