Rain and GhostBar @ the Palms casino has celebrities (many of them movie stars and atheletes - I saw Michael Vick there). But other nice clubs like Light @ Bellagio (I saw Tony Gonzalez of the Kansas City Chiefs, NFL there) have celebrities too.

As far as restaurants go, MESA @ Caesars has some celebrities (but not high profile, the ultra famous stars like their privacy) and MIX @ Mandalay Bay have some pretty frequent visits from celebrities (I've seen one at each place - but only people like Anthony Bourdain from No Reservations on the Travel Channel)

Hope this helps - good luck and have fun, you dont need the celebrities to have fun in a city like Vegas!

The Palms is usually crawling with them... visit the Ghost Bar. Also try Body English at the Hard Rock, Tao at the Venetian, Light at Bellagio, Tryst at the Wynn, Pure at Caesar's Palace, and Jet at the Mirage. Sometimes Tangerine or Social House at TI.

Body English is big with celebrities because they have VIP sections with one-way glass. (They can see you, but you cant see them.) Naturally they hit the dance floor too, so you still have a good chance of a sighting.
