The thermo coupler is a small stem next to the pilot light with a copper wire coming from it to the fuel supply box where the dial is. After you replace the thermo coupler, turn the dial until the notch in the dial lines up with the pilot activating push button. Light a match and hold it to the pilot light while pushing down on the push button. Hold down for 1 minute. After that release the button and the thermo coupler should keep the pilot lit. Now turn the dial on top to on and the burner should come on. The water temp dial should be put almost in the center of it's travel distance. Btw, it may be time for a new water heater.

The thermocouple is the small metal tube (about 1/16" round). The tube is filled with a gas that expands when heated. There is a button that is pressed that bypasses the thermocouple. Press the button and gas comes out of the pilot. Light the pilot while holding the button. Continue to hold the button for about a minute, the gas must get hot and expand. Let the button go, if the pilot goes out then you probably have a bad thermocouple. Try lighting the pilot again and hold the button for 2 minutes. If it doesn't light then the thermocouplt needs to be replaced. This is not uncommon and is very easy to replace. The dial is the temperature setting for the heater (how hot you want your water to be). Go to the hardware store and look at some like models to see which was the dial turns or get the pilot lit and turn the dial halfway, then adjust as necessary. You'll have to experiment on which way to turn to get hotter water.
If you don't get any gas out of the pilot when you push the button then the entire unit is bad. Not as common but it does happen.

Remove and replace this just make sure that you buy the correct length because that is the way they are sold in the store after replacing this turn the HWH gas valve to the pilot position hold down the plunger and light the pilot it should stay lit after holding the plunger down for at least a minute. The temp dial you mentioned has nothing to do with the pilot light this dial controls the main burner when you turn this dial and hear the click that is when the main burner either turns on or off depending on the temp of the water. Be careful working with gas is very dangerous and should be left up to a licensed professional.

A thermo- coupler works by creating a mini voltage which keeps the gas suppy flowing. When you light the pilot the coupler is cold. Turning valve to the first stop and holding it down enables the gas flow to the pilot,you must hold down on the valve to light the pilot,then keep holding for a minute or two to heat up the coupler. When the coupler is hot enough it takes over .My advice call the people who supply your gas dont operate a gas devise without a temperature regulating dial and have them show you up close what to do. Gas can be dangerous!!!!

Once they are set you should never have to adjust air shutters on a burner. If you are suddenly having this appliance not operate properly and the flame is orange then something beyond simple adjustment is causing it. The gauges on storage tanks can be wildly inaccurate. They work with a magnet rotated by an arm that hangs down into the tank and rises or drops with the liquid level. Tap the gauge lightly with a screwdriver or something. They can stick in colder weather. You may very well be nearly out of fuel. If not, then you will need to call a qualified technician. There is a special tool that is not generally available to the public called a monometer that they will use to check the pressures in the piping system. If the delivery pressure is not within a fairly small tolerance your appliance will not work properly. You may have a regulator(s) that is no longer delivering the correct pressure. The thermocouple is part of the 100% safety system. It is there to sense the flame and tell the gas valve it is safe to remain open. It has nothing to do with flame quality. Unfortunately, that's about all the options you have to deal with this safely!

Most water heaters, you have to push the gas valve in to get the pilot light to light, you will also have to hold the button in until the thermocouple gets hot enough to get a signal to the controller to keep it lit. You may want to get a piece of steel wool and clean the probe to be sure the heat is being transferred. The dial you are talking about is the temperature dial, and that is used to set how hot you want the water to be.

if it won't stay lit it could be the thermocouple. the pilot could also need cleaned out. However, this is one of those things that you may want to call a professional to look at.
