They're called "Con-trails" ...Condensation trails from the water vapour produced by the burning fuel in the planes engines. The water vapour begins to condense and forms a 'cloud' but, because they're leaving the exhaust in more or less a straight stream, they form the 'white trails' that we see.
When fully condensed to water, it disappears.

What you see is just the water vapor from the burning of fuel condensing into, in essence, a cloud. The fuel burns at high temperature, producing carbon dioxide and water. Since the plane is flying at high altitude where it is quite cold, the water formed just condenses into liquid water as it cools behind the plane.

It is mostly just water vapor which is a by-product of fuel burning. You should be more concerned with the exhaust from cars especially if you live in a big city.

It depends on what is going on in your area. Most of the time it is pesticides or fertilizers, but if your area needs water they will spray water to keep the grass from becoming dry and causing a fire.

If you are talking about contrails, some scientist worry that they are a cause of climate change. If you are talking about crop dusting, some people have been hurt by the chemicals, especially the insecticides.
