Before I continue, let me say that I am asking this question simply out of curiosity, not arrogance.

The word technology, according to Dictionary.com is defined as “the branch of knowledge that deals with the creation and use of technical means and their interrelation with life, society, and the environment, drawing upon such subjects as industrial arts, engineering, applied science, and pure science.”

Technology is not just confined to modern conveniences like computers, television, ipods, and automobiles. Technology pertains to any physical advancement within society. Even the horse an buggy, which the Amish use, is a form of technology. So how do they determine, what is right and wrong in terms of usage. I know the Bible pretty well, and I’m virtually positive, it says nothing about technology being prohibited or restricted.

When we’re flying around in hovercrafts, as a habitual means of transportation, the Amish will be driving automobiles. Why is that?

Well its my understanding that the Amish don't use any technology that would leave them (individually or the community) dependent on others. Electricity needs to be produced somehow, can't rely on the power grid. Since this would be a big burden for them they go without. Same as cars. Would need fuel and parts. They can fix or make their own buggy and care for their horses. So its not so much technology itself they shy away from, its us. To not need us and be self-sufficient, they make that sacrifice. They could yet be proven the wisest white people in north-america. :)
Hope this helps

I have some inside information on the Amish on the above topic. It is not that the Amish believe that a car is wrong, they just believe that there are a whole "boatload" of issues and temptations they won't get into if they don't have a car. The same with technology... You won't have an issue of your kids looking at porn on the Internet if you don't have a computer. It is inevitable that the Amish need to adapt somewhat to technology. When you look at society, technology doesn't seem to be making people better morally, etc.

It's a way of life for them that they adhere to out of survival instinct.
They are deeply religious, but do have flaws, such as smoking.

I don't know, but when you think about global warming you can't help but think maybe the Amish aren't so crazy.
