There were two.
The Once and Future King, for all that I hated the ending. It was just so ... wrong that things happened the way they did in the book that it was upsetting. I actually felt like I was there watching these things happen and watching everything turn the wrong direction in the end, dispite what people did. It was sad as all get out.
The Alchemist. It's such a gentle story, but it's pretty powerful. On the surface, it's about a boy who goes treasure hunting, but under that it's about how the universe works and how living life in tune with the universe is both the easiest and most difficult thing you'll ever do. It's a short book, but it's well worth reading and rereading.

Oh good question. "Most memorable" is certainly a different question than "favorite book," so I actually have to put some thought into this one instead of giving my stock answers!
I thought that "Traveling Mercies" by Ann Lamott was quite memorable. It's a very raw, honest look at life and faith, and I was very moved. Also, "The Cost of Discipleship" by Deitrich Bonhoeffer, which was incredibly thought-provoking.
As for fiction books, I think the stories of Flannery O'Connor are nothing if not memorable.

There are four books that I've read so far that were very memorable:
Silent to the Bone
Titanic: The Long Night
The First Harry Potter Book
Roll of Thunder, Hear My Cry
I could relate to these books because the main characters were teens. Also the diolouge in each of these books was very engaging.

The Lord of the Rings trilogy is the most memorable books for me. As it has shown me the true meaning of friendship. It has also shown me that any hardship can be overcome.

The Kite Runner by Khaled Hosseini, but not memorable in a good way. I think horrible stuff if sometimes more memorable.

Probably Cloud Street by Tim Winton, we studied it in year 12 literature and it started in the town where I was born, it wasn't a life changing book but I could still quote from it 6 years later.

The first book that came into my mind when I read this question was
Swiss Family Robinson.
My 7th birthday present from my mother was to be taken to the public library to join the children's section. SFR was the book I borrowed that day.
