There is no answer firm and complete to this question available anywhere on earth in any philosophy. It is simply God's Will. A plausible answer in one philosophy is that just as man or animal seeks to derive pleasure from his own childred and so procreates, similarly God created us to derive the same pleasure by watching us work and play.

In a lighter vein --- He must have been feeling very lonely.

If there was a God, and He was a perfect being, and the universe was perfect, it would be nothing but light. No contrast.
The letters on this white background are well defined and easy to differentiate. To look at oneself there must be a reflection.
So Gods first concept of self realization was darkness. To contrast His perfect light, of course.
Without evil, there is no good, without sadness, no happiness, without hatred, no love. Mankind is the vessel that God uses to experience self-realization. All aspects of it. Good and Evil. So find your part in the "Play" and play it to the fullest.

I am limited by the boundaries of my own mind. I have no idea of the motivations of another entity (assuming this entity exists)- and even if I claim to know, I'll be giving you my perspective rather than God's,

So, I'm going to pick a reason I'd choose to create man, if I were God: To be known.

Let's start at the beginning, shall we?

Laughter is the confusion of the brain when it doesn't know how to react to something not fitting into the situation in front of our perception. That or crying.

Nobody likes crying.

Thusly we are a great bit of physical comedy that the Universe/God/Godess/ has created to give it/him/her/ -self a good chuckle.

that's my theory and I'm sticking to it.

Look up Genesis.

God has created man and granted him "stewardship", to leave him in charge of the earth.

God has created us to answer this question.

For his pleasure. We are supposed to willingly give him all of ourselves, Love, honor, praise, and glory. I could give a specific bible verse. That says exactly why we are here. However, you asked for philosophy. There are in, return for our obedience and dedication, many benefits or rewards. People get upset with some of it. However, we do similar things with our friends, family, and pets.

We were created to be tested on how we can react with other people and the environment.
