Both science and religion can explain love, and yes love
can defy those explanations. Science and religion can
both be considered as reasonable objective guidelines
in their appropriate contexts, but love involves emotion
which is uniquely individual. Emotional expression
requires effort, including brain power, so the emotionally
charged individual might not have the working rationality
to make decisions according to explanation and reason.

Love defies many things, science, religion, reason, circumstance, logic, and definition.
My favorite quote is from Love and Other Demons, by Gabriel Garcia Marquez.
A young girl, Sierva Mar'a, asks her father this question:
"Is it true, as the songs say. that love conquers all?"
He answers, "It is true, but you would do well not to believe it."

Love "defines" science and religion. Like , it does to everything.
We are mistaking Love as one to be associated with only with a fellow human . Or , if stretched a little , with some animals. In the estern world Love is intensly expressed when personifying God. I have not heard ,in other religions this expression of Love for God.
As for science there are many , like Einstein for example, scientists who loved what they were doing by associating their achievements with the creator. By the same token , it should be mentioned that Einstein is said to have ahd a very miserably Love life with his Life partner.

I have often been heard throughout my lifetime to say that I love science. THis answer is clear and did not take the slightest hesitation. If it were somehow a difficult choice, I would ask myself which I could live without and again the answer comes quickly and easily. I found your observations on previous questions rather interesting and, since it is the Holidays, as an Atheist, I wish you all the chocolate that you could want.

Love knows no reasons,
love knows no lies.
Love defies all reasons,
love has no eyes.
But love is not blind,
love sees but doesn't mind
love Love--though he has wings,
...And like light can flee,
But above all other things,
...Spirit, I love thee--
Thou art love and life! Oh, come,
Make once more my heart thy home.
For love, and beauty, and delight,
There is no death nor change: their might
Exceeds our organs, which endure
No light, being themselves obscure.
What all this has to do with your question.
Well...all I am trying to say is...
Love defies everything. All the reason in the world. Science and Religon are made of reason.
And love has that power to challenge EVERYTHING!

I think that love is almost a force of nature. It's like an energy, one that can't be detected or measured in any way. Despite this it is so powerful, it can affect decisions, actions, and even change the course of a life. And it cannot be created or destroyed; like all energy it can only be changed or transferred.
I'm not personally religious, but I think that love&religion can be summed up in one quote I once heard
"I asked Jesus 'how much do you love me?' He replied 'this much'. He stretched out his arms, and died."
So to summarize my answer, no it doesn't.

Love defies nothing. Love embraces and joins all things. I'm a bit surprised that you would ask such a question. Have you truly been loved?

I don't consider love an opposing force to science or religion. In fact, I think it's possible for all three to exist together.
