It's because in Spanish in order to abbreviate something that is in plural, you use the initial twice. Therefore, EstadoS UnidoS becomes EEUU because both estados and unidos are in plural.

I'm guessing "Spanish" people are those originating from Spain...and "Hispanic" is a term to use for anyone who speaks the Spanish language.

i lived in mexico, and the "new" way to do it is EUA.... i wrote it EEUU once and somone said, "that's SO old fashioned" so...i don't know... i wouldn't say EU though, because the official name for mexico is "the united states of mexico" so...it's like "EU of what?"
