I'm not so sure about holliday, but maybe a Brit can address that.

Don't forget all the -ize, -ise words too.

Curb / Kerb
Aluminum / Aluminium

For the Aluminum one, the British spelling is simply wrong. Yes, I said wrong. Humphrey Davy, a British chemist and the discoverer of aluminum, named it "aluminum", but some other British chemists didn't like the name, so they ignored his spelling and added a letter. Those cheeky bastards!

I'm not sure, but maybe ketchup and catsup? I've never completely heard the truth about how these are spelled :P
