put them on, get into the position that causes the problem, and safety pin it.
cut straight down the center to the point where it doesn't "pooch" any further, overlap to the point where the pins are (so that it will be the right size) and sew.
you can also get a seamstress to do it for you.

OPRAH's guests say that it's impossible to buy clothes that fit you right off the rack. You should expect to get everything tailored. Now, while I'm not sure I agree with that, if these are your favorite jeans, I'd take them to a tailor. Don't try to fix it on your own unless you have a lot of sewing experience.

Oh that happens to some of mine too. Just wear a belt with them or you could take them to a tailor if it's that big a deal.
