Well actually, by virtue of the fact that I live mostly in a very rural area in the Rocky Mountains I have had the privilege of seeing a tree crash down in the woods. I was standing on the porch overlooking the river when I heard this major crackling, snapping and crashing sounds. I looked across the river to see this huge cottonwood tree just fall, collapse like. Afterwords, besides the rushing river it was dead silent.
But if you want to, go ahead and ask the squirrels!

They would hear it and react to it. Maybe run away, that's how you would know they heard it. I'm sure if you timed their reaction to the fall you could tell if they are reacting to the sound it makes or the vibration it makes. I'd say they are reacting to the sound first though since that's the first wave that will travel out from the fall.

All laws of physics say a tree would make a sound if no one was around to hear it. So yes, it would.
