If you're counting by yolks, wouldn't it depend on how many were in each egg?
Would one double yolker and a single count as two or three eggs? If the latter, then two eggs.

If it will be a super stuffed omelet then I use 5...I know, what a sow. Otherwise, only 4. Don't forget your milk to fluff them up.
