Checkers or Droughts? Played with black and white or red pieces, and played by jumping the opponent to win that piece. Is that the game you mean?

There are many such games

The chinese and japenese have there own chess variations. The may japanese variations are called Shogi.

There is also a fun game called Tally Ho by Kosmos which combines simplified chess skills and luck. It has a hunting theme, with the animals and humans hunting each other at the same time.
