If by holding down the play/pause you mean that you're now trying to reboot it and it's still not responding, your best bet is, sadly, to let the battery drain.
Before that, though, you should try plugging it into your computer or into an outlet to see if that jostles it out of its freeze. It's usually a pretty bad freeze if holding down play/pause doesn't force it to reboot, though, so this may not work.

First be sure to pause the music and make sure it is not on hold. Then you go to the iPod screen. Then hold the play/pause button. If that doesn't work then put it in the computer. If that doesn't work then you should just let the battery die and charge it back up.

Unplug your headphones and let it sit idle It will shut off eventually.
If it keeps doing it, hold the Menu and center button, and the screen will go blank. Then hook it up to your computer and select factory restore in your iTunes.
The programming is probably just whacky.

This is a common issue. Just hook it up to a charging device to jostle it. If that doesn't work reset the iPod.
