In my experience, a lot of times they shoot the scenes on a Sound Stage which a big warehouse insulated to shut out outside sound. In there they can more easily control the lighting and make it any time of day they please. They can replicate an outdoor scene as well, it just depends. Of course they can actually shoot at night, outside as well or even in the early morning hours.

Scene Nights? Do you mean like, when they are filming and it is supposed to be night? Well, if thats what you mean it really depends on the company, scene, movie, and tons of other things. But they can really shoot anywhere, even when its daytime outside. You see, there is this thing that you place in front of the camera that can make mid-afternoon look like 2am! Movie magic!!
