With the dining plan being so popular, many of the restaurants will sell out in advance. Not everyone keeps their reservations, so there is a chance that if you go you will be able to walk in and get a table, you may have a longer wait though.
What I would do, if there are restaurants that you really want to go to, then I would make a reservation (only a few have cancellation policies and they will tell you when you book it if there is one so you know) then if you aren't able to make it you can just skip that reservation. They will cancel 10 minutes after your reservation anyway. That way, if you decide on something else, or don't have time, you don't have to worry about it. However, if you aren't able to get a table at another good restaurant, then you always have it to fall back on.
I've gone before and walked in, but sometimes the wait can be pretty long and the really popular restaurants you usually can't get a walk in reservation. So, it just depends on when you will be going and where you want to eat, if you want to risk it then you can try it, but I think to be on the safe side I would try to book a few reservations.

If you want a sit down dinner, you better have reservations!! Like others have said, with the Disney Dining Plan things book up 6 months in advance! The fast food type restaurants are a little easier to get into and they don't accept reservations.
It is a pain, especially if you want to be spontaneous in what you do. We found that out when we went in May, but we were thankful to at least be able to sit down to a nice dinner.

i was there 2 weeks ago and had the same thought. i was disapointed because the 2 resturants that i wanted to eat at i could not get in. i was only at that park one day and did not want to waste another day just to eat at those resturants. if you defentially know what resturant you want to eat at a specific park make reservations. you can usually set up the time you eat your normal dinner. most of the fast food places had the same items pizza, burger, chicken fingers, fries and ice cream some places do the turkey legs. after a while this food gets pretty boring. make at least one reservation at your favorite resturant the you want to try just to get a break from the fast food. if you are staying off disney, remember you can bring in your own food, no glass on disney with the disney dining plan definitly make reservations.

they have alot of fast food places that serve the traditional burger,chicken or fries that you can eat at, but that is like all they do have...you should make reservations, but if you cannot make it then just call in, or visit guest relations and cancel it...just make sure that there is no fee if you cancel, but most don't have that anyways...usually just the restraunts at hotels that are award-winning, because there are so many people that want to go to them...have fun, i have been there 7 time, and am going back for my 8th next februrary!!

When i went w/ my family we ate at liberty tree tavern at WDW and no we did not need reservations to eat there but it was a LONG wait for character dining so , to answer your question, no you really dont.
