"The Seven Samurai", especially with the director's cut. It never feels slack.
Animated is a bit more tricky, as I have seen very little and it it rather old ("alkazam the Great" which it isn't) or too recent to be a good benchmark ("Princess Mononoke")

My favorite non-animated Japanese film is "Rashomon" by Akira Kurosawa. Kurosawa was the top filmmaker of Japan and he is the one responsible for bringing Japanese cinema to the West. I reccommend any of his films, but this one is my favorite. The acting and story are both superb. My favorite animated Japanese movie is "Howl's Moving Castle" by Hayao Miyazaki. Miyazaki is the most famous Japanese animator to the United States, and has also done several other Anime films including "Spirited Away" (another of my favorites), and other famous ones as well. Just see either of those films and you will understand why they are my favorites. Hope this helped!

One I will mention that I just discovered is called Kaidan (Kwaidan). It is done by the same director who did Seppuku and Samurai Rebellion. It is a set of four ghost stories adapted from tales of Lafcadio Hearn (naturalized Yakumo Koizumi). 1965 movie but hearkens back to Expressionism in a big way. Atmospheric and haunting.

Onmyoji 1 & 2 are my fave movies. About a man who fights demons with his extraordinary mental abilities. Nausicaa of the valley of the wind gets my vote for best Anime, because it is strongly pro-environment and anti-war.

my favorite japanese movie is actually the maxi-series of james clavell's shogun, that they made for tv (if it just needs to be set in japan). but if it is japanese made movie then kurosawa's seven samurai it is great movie that keeps you glued to the screen
anime i would have to say akira, or ninja scroll (the first one)
both are awesome

My favorite anime is Ghost in the Shell. I can't explain why--I just like it. Well...maybe it has something to do with the song in the opening credits? Maybe.
