Burning bush (euyonomus) gets to be about 10' x 10', and has gorgeous red fall color. Forsythias have pretty yellow spring flowers, and grow large as well. As for maintainence, that depends on your taste, as they can get a little wild lookin if left unpruned.
Also, viburnums grow pretty quickly, and some get rather large. Oakleaf hydrangeas can get big, too, if the soil conditions are right for them.

Lilac's are easy to grow. They get tall and wide. Also Honeysuckle bushes get big and also bloom. Bridle-wreath is another pretty bush. It does get wider than tall, but is easy care. All three of these are thick bushes so should cover real good.

I planted a "Great wall of China" bush. In a year it grew quite full. You still have to trim it, but it's well worth it. They grow really fast.

I would suggest a boxwood. They thrive in all conditions. I don't particular like them but they do cover well.
