I'm considering buying a used cruiser (1985-1995) in the next 6-8 months. When I buy a used car I research using consumer guides that point out the plusses and minuses of each model and what to watch out for, but I haven't been able to find one for bikes. Any suggestions?

No payments is very rare, you're either paying the loan or paying the mechanic. It's often only a short time between the end of your loan and when it starts needing repairs, plenty of people are struggling to repair a car while they're still making payments on a loan even. So you definitely don't want to assume you're on easy street if it's paid off. I'd consider not making a large investment in your first car, insurance will be high on a more expensive car with no driving history. Fact is, odds are high that the car might be damaged learning to drive. Not just the odds of crashing it but just learning to take care of it. I sure wasn't easy on my first car and it didn't last me long. You might consider a used Mitsubishi Lancer, sounds like it would meet your needs. As a mechanic I see many cars and I'm impressed on how well Lancers are holding up to new drivers. They aren't breaking down like other cars I see and maintenance is low. The OZ edition is pretty sporty. Have a mechanic inspect the car you choose before purchasing it, even if it costs to inspect it you'll save money by not buying junk. You're making calls and crunching numbers so you'll be making a good informed decision, which is great.

Gotcha is a pizza face teen that likely doesn't even know how to change his oil, don't mind him.

Hondas with low miles or Harleys with high miles come to mind. Not that Harley is the most reliable, but when it comes time to sell, you'll have enough to upgrade to something newer. Honda makes good cruisers too. Crotch rockets are cool too, just don't get a method man wanabee's bike that's been dropped, endo'ed and weelied to death.

Cruisers rock! I proudly ride an 05 Suzuki C50T. Check out the reviews and test rides at motorcyclecruiser.com. They've got a decent archive of them.
