I could say Mustang because I like them better, but it really depends on what year, engine, and other options the car has. Mechanically, the Camaro and Firebird are the same, just with different body and interior panels, if that makes a difference to you. Since these are considered performance cars, the other thing to consider is if whichever car or cars you look at are stock or modified, and if modified did the person doing the work know what they were doing. I've seen plenty of cars where someone bolted aftermarket parts into the car just because they had seen someone else do it, and the car actually ran worse afterwards. Unfortunately, if someone did mess up the car, it may not be easy to tell even by driving it.
Here is how I would think about it. You can always modify a car to run faster (I've done it often enough), so as long as you get a car that high performance parts are available for (and all three that you listed are very well supported by the aftermarket) this shouldn't be an issue. As for looks, that's very personal. I personally think the mustangs almost always looked better than the Camaros, with the Firebirds somewhere in between, but one of the people I know feels the opposite way. You need to decide what you think looks best to you, because you're the one buying it. As for the mileage, generally the faster they are the worse mileage they get, so you'll need to decide what is more important and find a compromise that you can live with. Lastly, all three were produced in pretty significant numbers and should not be too hard to find, although as they get older any of them will be harder to find for sale and more costly.
Overall, what I would do is to decide what car I like the best overall, have it inspected by a competent mechanic before you buy it, and then look into any modifications you want to do to it to either make it faster or personalize it. That way you're more likely to end up with a car that you're happy with. Good luck!

Definitely the Mustang. By far the best looking, huge selection of engines, interior and exterior dress-ups, and it started the pony-car trend. It doesn't get any better than the original.
