try whiffle ball with this variation:

Play like real baseball, Set up a field with about 20-30 foot pitchers distance and 40 foot bases and 80 foot homerun fence. The pitcher can throw as hard as they want, curve balls etc, just like real ball. The batter must use a real bat, not a plastic one. If the ball goes over the fence its a homerun, if its caught in the air its an out, if its a ground ball you run to first. On a ground ball play a rule called "pitcher's hand" as soon as the pitcher has the ball in his hand you are out if you haven't reached first. Keep track of "ghost runners" and play a pre-set number of innings at 3 outs per inning.

Adapt the rules and field size as needed to make it as close as possible to real baseball.

Some friends of mine set up an entire league in their backyard, teams were 2 players each, they kept standings and stats and everything.

We used to play a game with just 2 or 4 players, that we called Fast Pitch.
You need a hard rubber baseball, and a windowless brick wall facing an open field. You paint a strike zone on the wall, and base hits are determined by how far you hit the ball on a fly. The batter doesn't run.
For instance, any ball that lands behind the pitcher is a single, if it rolls to the fence it's a double. If it hits the fence on the fly, it's a triple, and so on. If the ball bounces in front of the pitcher, it's just a ground ball and the batter is out if you can pick it up before it stops rolling (or reaches the fence).
This game works best with 2 guys on a side, because then you switch pitchers, and you have a fielder (less doubles), but we played it all the time just one on one.

"Over the Line" used to play it all the time when I was a kid. A pitcher and a hitter and if the hitter doesn't hit it over a line about 100 to 200 feet away, depending on the age of the two players, he is out. A single might be a 100 feet, a double 200 feet, a triple 250 feet, and a homerun 275 feet. Three outs per inning and a nine inning game and you have a winner. You have to be young to play the game or have a lot of baseballs because you don't want to be spending all your time chasing the ball. The pitcher can strike you out as well but there were no walks, those were our rules.

I used to play in an unfinished basement with 1 friend. We used a plastic bat and a little toy ball. Then you can throw the ball at the batter/runner to get him out. It could be played outdoors too, but there will be a lot of chasing the ball after its hit and thrown.

besides tossing the ball back and forth these not much for you two to do you probably need at least 6 people playing to have anything resembling baseball

Yeah, wiffle ball is a fun game. The ball is almost much lighter, so it won't go as far as a real baseball. The pitcher can still pitch, and the hitter can still hit the ball, but it won't go as far.

maybe take a hard rubber ball pitch it on a bounce and have the other guy hit it but play close to a wall and however high it goes is a certain hit.
